    No Knead Raisin Bread

    1 cup + 2 tbls warm water
    1 okg dry yeast
    1 egg
    3/4 cup raisins
    1/2 tsp vanilla
    3 1/2 cups flour, sifted
    1/3 cup sugar
    1 tsp salt
    1 tsp cinnamon
    3 tbls softened margarine

    In bowl, stir yeast in warm water until dissolved. Sift
    flour, sugar, salt, cinnamon together. Add egg and vanilla to yeast.
    Stir well and then add half of flour mixture. Beat with mixer on low speed for
    2 minutes. Add remaining flour. Mix by hand until smooth. Scrape
    dough from side of bowl. Cover. Let rise until double. (40 min). Stir
    batter and fold in raisins. Pour into 2 coffee tins or 2 small loaf pans.
    Let rise again. (30 min) Bake @ 365 degrees for 40-50 min. Brush with butter while
    bread is still warm.
