    Shortbread Base

    1/2 cup margarine
    1 cup flour
    1 tbsp sugar

    Bake 10 minutes
    ________________________
    Main Ingredients

    3 egg yolks (4 if doubling the recipe)
    1 cup sugar
    2 tbsp flour
    1/4 tsp salt
    1/2 cup evaporated milk
    2/3 cup rhubarb
    ________________________
    Topping

    3 egg whites
    1/3 cup sugar
    Vanilla
    Sprinkle coconut and bake at 350° until brown

    Recipe



    Beat egg yolks. Add milk, sugar, salt. Str well and place in a pot on the stove. Add rhubarb (that has
    been washed and cut into small pieces). Stir well until mixture
    comes to a boil. (Medium heat.)

    After it boils for 20 minutes, add a mixture of corn starch and 1/4 cup of water. Continue
    to stir so that the mixture does not stick or burn. Pour mixture over shortbread base.

    Beat topping. Spread topping on base. Sprinkle with coconut.

    Bake at 350° until brown. (Depends on oven temperature, about 15 minutes)
