1/2 cup shortening
1 cup white sugar
2 eggs
2 tbls milk
1/2 tsp salt
3 bananas, mashed
2 1/4 cups cake flour
2 tsp baking powder
1/4 tsp soda
1/4 tsp lemon extract
Recipe
Grease 2 round 9 inch pans. Sift cake flour 3 times. Add other dry ingredients except for flour. Mash bananas. Cream shortening. Add sugar gradually and cream together till light. Add eggs, one at a time, beating well after each. Add bananas, blending well. Add flour and milk alternately. Add lemon extract.
Turn into cake tins and bake at 350º for 35-40 minutes. Let cool before frosting.
This cake is very tasty when allowed to stand for a day or two.
Frosting
Combine 1 cup sugar and 1/3 c water. Bring to a soft boil. Beat this syrup into 2 beaten egg whites. Continye beating until thick enough to stand in peaks. Spread on cake.
