1 cup butter
3/4 cup sugar
3 eggs
Grated rind of one lemon
1/3 cup milk
2 1/2 cups sifted cake flour
1 tsp baking powder
1/4 tsp salt
1 cup quartered cherries
1 cup sultanas (white raisins)
1/4 cup chopped citon peel
1/2 cup chopped walnuts
Recipe
Sift flour, baking powder and salt. Prpeare fruits, nuts and dredge, using 1/2 cup of the sifted dry ingredients.
Preheat oven to 350ºF. Prepare deep loaf pan with two thicknesses of wax paper. (Pan the size of a loaf pan).
Cream butter and sugar. Add unbeaten eggs, one at a time, creaming and beating after each addition. Stir in grated lemon rind. Add dry ingredients and milk alternately to creamed mixture. Stir in dredged fruits and nuts.
Bake 1 1/2 to 1 3/4 hours with starting temperature at 350º, graduallay reducing to 325 after 30 minutes.
Note: Half green and half red cherries may be used.
