2 lb fillet of sole
1 pkg thawed frozen spinach (Fresh is better)
3 tbls shortening or butter
1/4 cup chopped onion
1.4 chopped mushrooms
1 beaten egg
2 tsp each of salt and pepper
3/4 cup white wine
1 cup light cream
1/2 to 1 cup bread stuffing
Recipe
Saute onion, mushrroms and spices in butter until tender. In bowl, mix spinach, stuffing, egg and spices. Add sauted veggies. Roll fillets around stuffing. Place in greased dish seam side down. Pour wine and cream over all. Dot with shortening or butter.
