Tarter Sauce

1 cup mayonnaise
1 tsp Dijon mustard
1 tsp finely grated lemon zest
1 tbsl lemon juice
Dash of Tobasco Sauce
2 tbls drained sweet pickle relish
2 tbls finely minced shallots
1 tbls drained tiny capers
Salt and freshly ground pepper to taste
Combine mayo, mustard, lemon zest and juice, tobasco and relish
in a bowl. Refrigerate, covered for at least 1 hour before serving for
flavours to blend. Store, refrigerated for up to 3 days.
