Deer Island Lobster Stew
Deer Island is located in the Bay of Fundy in New Brunswick.
Boil lobster and allow to cool. Use about 2 (1 1/4 pound)
lobsters. Remove meat from shells and cut into chunks.
In a saucepan, melt 1/4 cup butter. Add lobster meat and cook until pink. Season with
1/2 tsp salt and a pinch of pepper. (I also add a dash of lemon and pepper).
In a large sauce pan, melt 2 tbls butter and stir in 2 cups diced raw potatoes, 1 tsp salt and 2 cups boiling
water. Simmer over medium heat for about 5 minutes or until potatoes are cooked. Add lobster.
Heat thoroughly but do not boil. Pour into fresh bowls that contain broken soda crackers.
