    Favourite Maritime Brown Bread

    1 cup rolled oats
    1/2 cup molasses
    1 pint boiling water
    1 yeast cake, dissolved in 1/2 cup warm water
    flour to make a stiff dough
    2 tsp salt
    2 tbls lard

    Pour hot water over rolled oats, salt and lard. Let
    stand until lukewarm. Add molasses and dissolved yeast. Add flour
    gradually. Knead dough on floured board until there is no stickiness. Place
    in greased bowl. Let rise until double in bulk. Then bake in moderate oven
    (350º) for 1 to 1 1/2 hours. Makes 2 long or 4 double loaves.
