    Lobster Newburg

    3 cups cooked lobster
    3 egg yolks, beaten
    3 tbls butter
    1/4 tsp salt
    1 1/2 cup Medeira wine
    Dash of cayenne
    1 1/2 cup cream

    Cut lobster meat into large pieces and heat slowly in butter, about
    5 minutes. Add wine and simmer till wine is almost all reduced. Beat cream into
    egg yolks, add to butter and season. Cook over slow heat, stirring constantly until
    thickened. Do not boil. Serve at once.
