Lobster en Coquille

Pick up some shells on a New Brunswick beach and after washing them thoroughly, use them as a container for the cooking
and serving of lobster or other fish.
Grease the inside of the shell. Spread over the surface a thin layer of well
seasoned mashed potatoes. Cover the potato with flaked fish seasoned with salt, pepper and lemon. Spread over the
fish 1 to 2 tbls of Hollaindaise sauce )or white sauce). Cover the sauce with buttered
bread crumbs. Flute mashed potatoes around the edge of the shell in a fancy design.
Bake shells in a 375ºF oven or until the contents of the shell are hot and the srumbs a golden color.
