    Fiddlehead Soup with Wild Rice

    List of Ingredients




    30 mL vegetable oil
    20 g fresh ginger
    chopped 15 g fresh lemon grass
    chopped 10 g fresh garlic
    chopped 260 g fiddleheads
    30 g fresh shiitake mushrooms
    julienned 900 mL
    vegetable stock 120 g wild rice
    cooked 30 mL saké to taste salt and pepper
    4 green onion, chopped

    Recipe



    Soufflé:

    In a small stock pot heat vegetable oil, sweat ginger, lemon grass, garlic and fiddleheads.

    Add shiitake mushrooms. Simmer for a few minutes.

    Add vegetable stock and allow the soup to simmer for 5 minutes.

    Add the cooked wild rice and saké. Bring to a simmer.

    Salt and pepper to taste.

    Place in warm soup bowls.

    Garnish with chopped green onion and serve immediately.

    Serves 6
