House of Seven Gables Chowder

2 oz. salt pork
1 large onion, diced
3 medium potatoes
1 lb. haddock
1 1/2 cup boiling water
1 (14 oz) can evaporated milk
2 cups milk
salt and pepper to taste
Cook meat until crsip. Remove. Add onions. Cook slowly. Add cubed taters
and fish to onion. Add water. Cover and simmer until veggies are tender. (about 15 minutes).
Add remaining ingredients. Cover. Simmer gently 12-15 minutes.
Yields 1 1/2 quarts.
