6 medium potatoes (about 2 lb.)
1/4 cup green onion slices
1/4 cup imitation bacon
1/8 teaspoon pepper
1/2 cup Thousand Island dressing
Lettuce
2 cups cherry tomato halves
1 cup green pepper strips
1 cup celery slices
Recipe
Cook, peel and chop potatoes. Combine with onion, imitation bacon and seasonings.
Add dressing; mix well. Pack potato salad into lightly oiled 6-cup ring mold; chill. Unmold potato salad on serving plate. Surround with lettuce.
Fill with combined tomatoes, green pepper and celery. Serve with additional dressings, if desired.
