Dandlions are weeds that grow in New Brunswick. They are used to make wine but are also eaten.
Cut off ends, allowing the leaves to separate. Wash by placing greens in a pan of water and lifting out of water. Wash in several waters to remove sands. Cook in a large amount of water in order to remove the bitter flavour. Cook greens until tender (about 10-20 minutes). Chop the greens before serving and season with butter, salt and pepper.
