Fiddleheads
Preparation
Shake out each stalk and head carefully so as not to break off head.
Remove brownish scale by washing well in warm water. Lift greens up and out of the water.
Let stand in salted cold water a good half hour or so before cooking. Cook in a small amount of
boiling water only a few minutes until the stalks are tender. Drain. Season with salt and pepper, butter, and lemon juice.
