2 tablespoons salad oil
1 medium onion -- diced
1 medium green pepper -- diced
1 small garlic clove -- minced
16 ounces can tomatoes
4 zucchini -- cut into 1/4 inch sl
3/4 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon oregano leaves
1/4 teaspoon basil
8 ounces pkg. mozzarella cheese coarsely shredded
Recipe
Heat oil in skillet. Cook onion, pepper, and garlic until tender. Add tomatoes with their liquid and next 5 ingredients; heat to boiling. Reduce heat to low; cover and simmer until zucchini is tender crisp, about 10 minutes, stirring occasionally to break up tomatoes. When zucchini is done, sprinkle evenly with cheese; cover and simmer about 3 minutes or until cheese is melted. Makes 8 accompaniment servings.
