List of Ingredients
12 oz pork tenderloin chop, cubed into 1” pieces, ½” thick
2 tsp olive oil
1 medium onion, chopped
2 garlic cloves, chopped
¼ cup flour
2 TB tomato paste
2 cups chicken stock
8 oz sliced white mushrooms
1 large green pepper, deseeded and diced
¼ tsp ground nutmeg
½ cup fat free plain yogurt
Salt & pepper
* Serve with wild rice
Recipe
Heat oil in a pan. Add pork, onion, & garlic. Cook over low heat for 4-5 minutes, until lightly browned.
Stir in flour and tomato paste, pour in the stock, and stir to mix.
Add the mushrooms, bell pepper, and nutmeg and season to taste with salt & pepper. Bring to a boil, cover, and simmer for 20 minutes until the pork is tender and cooked through.
Remove the pan from the heat, set aside to cool slightly, then stir in the yogurt.
Serve with wild rice for extra points.
