4 cups cubed cooked chicken breast
1 can (8 oz) unsweetened crushed pineapple, drained
1/2 cup diced celery
1/2 cup diced red onion
1/2 cup golden raisins
1/2 cup chopped dates
Dressing:
3/4 cup fat-free salad dressing or mayo
1/2 cup reduced-fat sour cream
2 tsps lemon juice
1 tsp ground mustard
1/4 tsp garlic powder
1/8 tsp pepper
6 lettuce leaves
Recipe
In a large bowl, combine the chicken, pineapple, celery, onion, raisins and dates. In another bowl, combine the salad dressing, sour cream, lemon juice, mustard, garlic powder and pepper; mix well. Pour over chicken mixture; toss to coat. Serve on lettuce leaf.
