List of Ingredients
Teaspoons Olive Oil
1 Med. Yellow Onion
1 Celery rib - diced
1 28 oz can crushed tomatoes
1/4 cup Tomato Paste
3 cups Veggie Broth
Black Pepper
1 Tbsp. Lime Juice
1 shot of Tequila
1 teaspoon Cumin
3 corn tortillas
Recipe
1) Saute onions and celery in the olive oil for about 5 minutes.
Place in slow cooker.
2) Add to slow cooker - crushed tomatoes, tomato paste, veggie broth,
and a lil' bit of black pepper. Let cook for 6 to 8 hours
3) Meanwhile, cut 3 corn tortillas into strips. Cook in oven for 6'
at 375 degrees or until crispy.
4) When slow cooker is done, stir in tequila, lime juice, and cumin.
5) Top each bowl with 1/6 of tortilla strips
Makes 6, 1 point servings.
