    Pumpkin-Coconut Bread

    List of Ingredients


    • 1 1/3 cups Vegetable Oil
    • 1 1/2 cups sugar
    • 5 eggs
    • 2 3-oz. boxes of INSTANT coconut pie mix -*
    • 1 can pumpkin
    • 3 cups all-purpose flour
    • 1 tsp. Cinnamon
    • 1 tsp. salt
    • 2 tsps. baking soda
    • 1/2 tsp. nutmeg
    • 1 cup walnuts - optional (I usually add more than 1 cup!)
    • *-Sometimes it's difficult to find "Instant Coconut pie mix"...
    • so Instant Vanilla pie mix with 1 cup shredded coconut may be
    • substituted.




    Instructions


    1. Preheat oven to 350º

    2. Cream the oil and sugar, add eggs one at a time---mix well.

    3. Blend the cinnamon, salt, soda, nutmeg with flour and add to mixture, mix thoroughly. Fold in nuts if used.

    4. Pour into two greased & floured loaf pans.

    5. Bake for 1 hour, or, until done as tested with toothpick.



    Final Comments


    Great toast with cream cheese to serve with morning coffee!
