Pumpkin-Coconut Bread

List of Ingredients
- 1 1/3 cups Vegetable Oil
- 1 1/2 cups sugar
- 5 eggs
- 2 3-oz. boxes of INSTANT coconut pie mix -*
- 1 can pumpkin
- 3 cups all-purpose flour
- 1 tsp. Cinnamon
- 1 tsp. salt
- 2 tsps. baking soda
- 1/2 tsp. nutmeg
- 1 cup walnuts - optional (I usually add more than 1 cup!)
- *-Sometimes it's difficult to find "Instant Coconut pie mix"...
- so Instant Vanilla pie mix with 1 cup shredded coconut may be
- substituted.

Instructions
- Preheat oven to 350�
- Cream the oil and sugar, add eggs one at a time---mix well.
- Blend the cinnamon, salt, soda, nutmeg with flour and add to mixture, mix thoroughly. Fold in nuts if used.
- Pour into two greased & floured loaf pans.
- Bake for 1 hour, or, until done as tested with toothpick.
Final Comments
Great toast with cream cheese to serve with morning coffee!
