    Pumpkin-coconut Bread

    List of Ingredients


    1 1/3 cups Vegetable Oil

    1 1/2 cups sugar

    5 eggs

    2 3-oz. boxes of INSTANT coconut pudding & pie mix -*

    1 can pumpkin

    3 cups all-purpose flour

    1 tsp. Cinnamon

    1 tsp. salt

    2 tsps. baking soda

    1/2 tsp. nutmeg

    1 cup walnuts - optional
    *-Sometimes it's difficult to find "Instant Coconut pie mix"...

    so Instant Vanilla pie mix with 1 cup shredded coconut may be

    substituted.



    Instructions


    Preheat oven to 350�


    Cream the oil and sugar, add eggs one at a time---mix well.


    Blend the cinnamon, salt, soda, nutmeg with flour and add to mixture, mix thoroughly. Fold in nuts if used.


    Pour into two greased & floured loaf pans.


    Bake for 1 hour, or, until done as tested with toothpick.






    Final Comments

    Great toast with cream cheese to serve with morning coffee!
