These are the wonderful, light pancakes my dear Mother-in-law made. So good, I had to have the recipe!

2 eggs, separated

1 cup buttermilk

½ + 2 tbls. Flour

½ tsp. Salt

½ tsp. Soda

2 tsp. Sugar





Recipe



Beat egg whites until stiff; mix buttermilk and egg yolk. Sift dry ingredients then add to buttermilk mixture; fold in the egg whites. Heat griddle to medium heat and lightly oil, or, use a butter-flavored spray, pour about ¼ cup of batter for each pancake on griddle and bake until bubbles form then turn.
