    Left-over Roast Beef Casserole

    Recipe Introduction

    This a good way to use left-over beef roast...quick & easy!

    List of Ingredients

    1 1/2 cup celery, diced diagonally
    1/2 cup onion, diced
    1/4 cup butter, divided
    2 tbls. flour
    2 cups milk
    1 tsp. salt
    1 beef buillon cube
    1 10 package mixed vegetables, thawed
    1 1# can potatoes, drained and sliced
    2 cups cooked roast beef, diced
    1/2 cup corn flake crumbs



    Recipe

    Preheat oven to 350º.
    In a saucepan saute celery and onions in 3 tablespoons butter until tender, stir in flour. Add milk, salt and bouillon cube and cook over low heat, stirring constantly until thickened. Add vegetables, potatoes and beef...pour into greased 1 1/2 quaart casserole dish. Melt remaining butter, add corn flake crumbs and mix well. Sprinkle around edge of casserole. Bake for about 30 minutes or until bubbly.
