    This is one of our favorite summer salads, we had it quite often when we lived in California.

    List of Ingredients




    1 tbls. olive oil, or, vegetable oil
    1 pound lean ground beef
    1 package taco seasoning
    1 can kidney beans, drained
    1 small can sliced black olives
    1 clove garlic
    1 small head lettuce, chopped
    1 tbls. lemon juice
    1 avocado, sliced (optional)
    1 1/2 cup grated chedddar cheese
    corn chips, break up to bite-size pcs.
    Thousand Island dressing

    Brown ground beef in oil, add taco seasoning, 1/2 water, or, beef broth. Mix and simmer for 15 minutes. Add kidney beans and olives. Rub a large bowl with clove of garlic then add the lettuce and sprinkle with lemon juice. Add the meat mixture, avocado, cheese and as many corn chips as desired. Mix all together then add Thousand Island dressing to taste.
