When we feel the first chill of Fall, I know it's time to make this, our favorite soup! I usually double the recipe and have enough to freeze for later use.
1 Tbls. olive oil
1 pound lean ground beef
1-2 cloves garlic
1/2 cup onion, chopped
1/2 cup celery, chopped
1 1/2 cups cabbage, chopped
1 can kidney beans
1 15 oz. can diced tomatoes
1 cup water
1-2 Tbls. chili powder
1 tsp. salt
Recipe
In a large pot brown meat in oil; add garlic, onion and celery and cook until tender; add remaining ingredients, cover and simmer on low heat for 1-2 hours for flavors to blend.
