    List of Ingredients




    1 pound great northern beans
    1 meaty ham bone or 2 smoked ham hocks
    3 medium onions, chopped
    3 cloves garlic, minced
    3-4 celery ribs, chopped
    1/4 cup fresh parsley, chopped
    1 cup mashed potatoes or 1/3 cup instant potato flakes
    Salt and pepper to taste
    Parsley or chives for garnish

    Place beans in enough water to cover in a saucepan;bring to boil and boil for 2 minutes. Remove from heat and let soak for 1 hour. Drain and rinse beans then place beans in a large pot with ham bone and 3 quarts of water. Bring to boil. Reduce heat, cover and simmer for 2 hours. Skim off fat if necessary. Add onions, garlic, celery, parsley, potatoes, salt & pepper and simmerfor at least 1 hour longer. Remove meat from bones, dice and return to pot. Heat thoroughly. Garnish with parsley or chives.
    (NOTE: You may want to double this recipe and have some to freeze...it freezes well!)
