    Fresh asparagus was on sale yesterday so had to get some. Found this recipe and made it today...it is a 'keeper' and will be added to my favorites!

    List of Ingredients




    1 1/2 lbs. fresh asparagus or a pkg. frozen cuts/tips (10 oz)
    1 can cream of chicken soup
    1 T. flour
    1/2 cup sour cream
    1/4 cup grated carrot (optional)
    1 T. grated onion
    salt and pepper

    topping(s)
    3/4 C. herb-seasoned stuffing mix
    2 T. butter, melted
    or in place of stuffing mix
    1 c. Rice Krispies
    2 T. butter, melted

    Recipe



    Wash fresh asparagus, cut into 1 inch pieces and cook in boiling water until tender (not too long) Drain. (Prepare frozen asparagus according to package directions.) Bleand together soup and flour. Add sour cream, carrot, onion, salt and pepper. Stir in asparagus. Turn into a 2 quart casserole. Combine stuffing mix and butter or Krispies and butter and sprinke one of the toppings around edge of baking dish. Bake at 350* for 30 minutes.
    (I have found that a larger amount, even twice as much asparagus, can be used in this recipe without a problem)
