Recipe Introduction

One of greatest joys of spring and the prairies is the first picking of rhubarb This recipe is fabulous Makes 12 large muffins

List of Ingredients

1 cup brown sugar
`/3 cup oil
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
2 cups chopped rhubarb
1 cup buttermilk
2 1/2 cups flour
1/2 tsp salt



Recipe

Mix sugar, oil eggs, and vanilla .
Add dry ingredients alternately with buttermilk.
Fold in rhubarb.
Put in greased muffin tins
Sprinkle with topping mix.

Bake at 400 oven for about 20 to 25 minutes.

Topping
4 tbsp sugar
1 tsp cinnamon
