    I make a big pot of soup every week or ten days in the winter, and don't know the amount of ingredients, just throw handfulls of this and that in, So bear with me.I serve this with a loaf of homeade bread.

    List of Ingredients

    After you cook a chicken and have taken all the meat you want off the bones, throw the bones back into the roasting pan, add water, about 10 or 12 cups, and bring to boil on top of stove then simmer for about 2 hours.
    Strain this stock and pick any meat left on the bones, add to the stock.TAdd water or broth if necessary, toss the bones away.You should have about 8 to 10 cups of stock. Put this stock in the fridge overnight and in the morning skim any fat off.
    Put stock in a large stew pot add some of the leftover chicken or turkey meat, 1 large onion chopped, 3 sticks of celery chopped, cut up 5 carrots, and maybe 4 potatoes diced. Let cook for about 1/2 hour. then add salt,pepper,oregano,garlic,thyme, add these spices till you like the taste.Add quite a bit of dill and parsley also.
    I always add a handfull of macaroni, or any kind of noodles at this point, and let simmer for another 40 min to an hour, If you like a tomato'y taste add a tin of tomatoes chopped.

    This is so good.

    I cook chickens in the summer time and don't want to make soup at the time so just freeze the stock for the winter months. Do the same with your Xmas turkey....
