    Red Velvet Cake

    List of Ingredients


    • Preheat oven to 350º. Use rectangular pyrex dish or sheet cake pan.
    • 3 sticks margarine or buttter
    • 2-1/4 cups sugar
    • 3 eggs
    • 3-3/4 cups flour
    • 1T. cocoa
    • 1-1/3 t. baking soda
    • 1-1/2 t. vinegar
    • 1 T. vanilla flavoring
    • 1-1/3 oz. red food coloring
    • 1-1/2 cups buttermilk (shake buttermilk first).


    Instructions


    1. Preheat oven to 350º. In mixer, cream margarine, sugar and eggs.

    2. Sift flour cocoa and soda.

    3. Mix all ingredients above and add vinegar, vanilla and buttermilk.

    4. Bake about 35 minutes. Cool.

    5. Red Velvet Cake Icing:

    6. 12 oz. cream cheese

    7. 1-1/3 sticks margarine

    8. 1-1/2 t. vanilla

    9. Cream above ingredients together until blended.In mixer, blend all of the above ingredients. stir in 1-1/2 cups chopped pecans and spread on cooled cake.
