Red Velvet Cake

List of Ingredients
- Preheat oven to 350º. Use rectangular pyrex dish or sheet cake pan.
- 3 sticks margarine or buttter
- 2-1/4 cups sugar
- 3 eggs
- 3-3/4 cups flour
- 1T. cocoa
- 1-1/3 t. baking soda
- 1-1/2 t. vinegar
- 1 T. vanilla flavoring
- 1-1/3 oz. red food coloring
- 1-1/2 cups buttermilk (shake buttermilk first).
Instructions
- Preheat oven to 350º. In mixer, cream margarine, sugar and eggs.
- Sift flour cocoa and soda.
- Mix all ingredients above and add vinegar, vanilla and buttermilk.
- Bake about 35 minutes. Cool.
- Red Velvet Cake Icing:
- 12 oz. cream cheese
- 1-1/3 sticks margarine
- 1-1/2 t. vanilla
- Cream above ingredients together until blended.In mixer, blend all of the above ingredients. stir in 1-1/2 cups chopped pecans and spread on cooled cake.
