Lemon Meringue Pie

List of Ingredients
- 1-1/2 cups sugar
- 4 T. cornstarch
- 5 T. flour
- 2 cups boiling water
- 4 egg yolks
- 1/2 csps plus 1 T. lemon juice
- 5 T. butter
- 1 t. lemon flavoring
- MERINGUE
- 4 egg whites
- 1/2 cup sugar
- dash of cream of tartar
Instructions
- Preheat oven to 450º. Make pie crust and bake according to Oil Pastry recipe.
- Preheat oven to 325º. Mix dry ingredients. Slowly add water and stir. Cook until thick while stirring.
- Pour into baked pie shell and cover with meringue.
- MERINGUE
- Beat egg whites until stiff and slowly add sugar and cream of tartar. Cover pie and bake on 325º for 10 minutes.
