    Lemon Meringue Pie

    List of Ingredients


    • 1-1/2 cups sugar
    • 4 T. cornstarch
    • 5 T. flour
    • 2 cups boiling water
    • 4 egg yolks
    • 1/2 csps plus 1 T. lemon juice
    • 5 T. butter
    • 1 t. lemon flavoring
    • MERINGUE
    • 4 egg whites
    • 1/2 cup sugar
    • dash of cream of tartar


    Instructions


    1. Preheat oven to 450º. Make pie crust and bake according to Oil Pastry recipe.

    2. Preheat oven to 325º. Mix dry ingredients. Slowly add water and stir. Cook until thick while stirring.

    3. Pour into baked pie shell and cover with meringue.

    4. MERINGUE

    5. Beat egg whites until stiff and slowly add sugar and cream of tartar. Cover pie and bake on 325º for 10 minutes.
