    Chicken Salad

    List of Ingredients


    • 2 cups of cubed cooked chicken, or sandwich chicken
    • 2 T. mayonnaise, low fat
    • 4 T. vanilla yogurt, low fat
    • 2 T. fat free sour cream
    • 1/2 cup pineapple tidbits or seedless grapes, or craisins if desired
    • 2 stalks chopped celery
    • 1/3 cup chopped nuts
    • 1 t. lemon pepper
    • About 1/2 t. salt
    • 1 boiled eggs chopped, if desired
    • 1 small green onion chopped


    Instructions


    1. Stir all ingredients together and if too dry, add more yogurt or mayonaise to taste. Refrigerate until cold before serving.

    2. This chicken salad is good served on toasted crousants. Serve with strawberries or other favorite fruits.
