Makes 2 loaves.
List of Ingredients
3 large eggs
2 cups sugar
1 cup salad oil
1 teaspoon cinnamon
1 teaspoon vanilla
3 cups flour 3 cups peeled and grated zucchini
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups chopped nuts
Recipe
Beat eggs until whipped. Beat, into the eggs, the sugar, salad oil, and vanilla in that order. Beat until mixture thickens and becomes lemon colored. Sift flour with cinnamon, baking soda, and baking powder. Fold into egg mixture. Then fold in nuts and grated zucchini.
Pour mixture into 2 well-greased and floured loaf pans. Bake at 350 degrees for one hour. Let cool in pans for 10 minutes before removing. You can serve immediately and enjoy!
