Light and Easy Cheesecake

1 cup graham cracker crumbs
4 tablespoons vegetable oil
4 tablespoons sugar
32 ounce carton vanilla flavored low fat yogurt
¼ cup sugar
1 tablespoon cornstarch
2 teaspoons vanilla extract
2 eggs, slightly beaten
Recipe
1. Drain the yogurt in cheesecloth or a yogurt strainer in your refrigerator for at least 24 hours.
2. Mix together the graham cracker crumbs, sugar, and vegetable oil. Press into the sides and bottom of an 8" spring form pan.
3. In a large bowl, whisk together the drained yogurt, sugar, cornstarch and vanilla extract. Stir in the eggs. Pour into the prepared pan and bake in a 325 degree oven for 30 minutes, until just barely set. Chill completely (at least 6 hours) before unmolding.
