    Chunky Artichoke Salsa

    List of Ingredients


    • 1 jar (6.5 ounces) marinated artichoke hearts
    • 1/4 cup pitted ripe olives, chopped
    • 2 Tbsp red onion, chopped
    • 3 medium plum tomatoes, coarsley chopped
    • 1 garlic clove, pressed
    • 2 Tbsp fresh basil leaves, snipped
    • Salt and fresh black pepper, to taste
    • Lettuce leaves
    • Tortilla chips


    Instructions


    1. Drain marinade from artichokes into batter bowl. Using food chopper, chop artichokes, olives, and red onion. Chop tomatoes using utility knife. Place vegetables in bowl. Add garlic and basil, mix gently. Season with salt and pepper. To serve, line bowl with lettuce leaves; scoop salsa in middle. Surround with tortilla chips.
