    Blueberry - Lemon Muffins

    List of Ingredients


    • 1 1/2 cup flour
    • 1/2 cup cornmeal
    • 1/3 cup sugar
    • 2 1/2 tsp baking powder
    • 1 tsp each: finely grated lemon peel, baking soda, and salt
    • 1 cup fresh blueberries (may substitute frozen without thawing)
    • 1 - 8 oz lowfat lemon yogurt
    • 1/4 cup nonfat milk
    • 1 large egg
    • 2 Tbsp vegetable oil


    Instructions


    1. Heat oven to 425 degrees. Coat muffin pan with non-stick cooking spray.
    2. In large bowl stir flour, cornmeal, sugar, baking powder, lemon peel, baking soda, and salt until well mixed. Stir in blueberries.
    3. In a small bowl, whisk remaining ingredients until blended. Add all at once to flour mixture and stir just until moistened. Divide amoung muffin cups.
    4. Bake 15 minutes. Leave in pan 5 minutes, then gently lift out onto wire rack.
