Blueberry - Lemon Muffins

List of Ingredients
- 1 1/2 cup flour
- 1/2 cup cornmeal
- 1/3 cup sugar
- 2 1/2 tsp baking powder
- 1 tsp each: finely grated lemon peel, baking soda, and salt
- 1 cup fresh blueberries (may substitute frozen without thawing)
- 1 - 8 oz lowfat lemon yogurt
- 1/4 cup nonfat milk
- 1 large egg
- 2 Tbsp vegetable oil
Instructions
- Heat oven to 425 degrees. Coat muffin pan with non-stick cooking spray.
- In large bowl stir flour, cornmeal, sugar, baking powder, lemon peel, baking soda, and salt until well mixed. Stir in blueberries.
- In a small bowl, whisk remaining ingredients until blended. Add all at once to flour mixture and stir just until moistened. Divide amoung muffin cups.
- Bake 15 minutes. Leave in pan 5 minutes, then gently lift out onto wire rack.
