- Cake:
- 2 cups sugar
- 1 cup (two sticks) Land O'Lakes butter, softened
- 5 eggs
- 2 tsp vanilla
- 1 tsp almond extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 cup half & half or milk

- Sauce:
- 1 - 12 oz package (3 cups) fresh cranberries *
- 1 cup sugar
- 1/2 cup water
- 1 to 2 Tbsp brandy, if desired **
- Heavy whipping cream, whipped, sweetened (if desired)
Instructions
- Heat oven to 325 degrees. Combine 2 cups sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1-2 minutes). Add eggs, vanilla, and almond extract; continue beating, scraping bowl often, until mixed well (2-3 minutes).
- Reduce speed to low; add flour and baking powder alternately with half & half, beating well after each addition and scraping bowl often (1-2 minutes).
- Spoon batter into greased and floured 12-cup Bundt or 10-inch tube pan. Bake for 65-75 minutes; or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool completely. Sift powdered sugar over cake, if desired. Store in airtight container for up to 4 days.
- Meanwhile, stir together cranberries, 1 cup sugar and water in 2-quart saucepan. Cook over medium heat until mixture comes to a boil (5-10 minutes). Continue cooking, stirring occasionally, until cranberries pop (3-4 minutes). Cool 30 minutes. Stir in brandy. Place in microwave-safe bowl. Cover; refridgerate until serving time.
- Just before serving, microwave sauce on high, stirring once, until warm (1-2 minutes).
- To serve, spoon 2 Tbsp sauce over each serving of cake. Garnish with whipped cream, if desired.
Final Comments
* Substitute 3 cups frozen cranberries, unthawed.
** Substitute 2 tsp brandy extract.
