Lime Tartlets

- 3 large eggs, separated
- 1 (14 oz) can sweetened condensed milk
- 1/2 tsp grated lime zest + 2/3 cup lime juice, mixed
- 8 single-serving graham cracker crust
- 1/2 cup sugar
Instructions
- Preheat oven to 350 degrees. In bowl, with mixer on high, beat yolks and milk until fluffy. Slowly beat in zest mixture; beat 2 minutes, until thickened. Place crusts on baking sheet; pour mixture. Bake 12 minutes, until surface sets and knife tip inserted in center tests slightly wet. Remove from oven.
- Raise oven to 400 degrees. In bowl, with clean beaters, beat whites until soft peaks form. Gradually beat in sugar until shiny, stiff peaks form. Pipe or spread over tartlets; seal to edges. Bake 4 minutes, until lightly browned. Cool. Refrigerate 1 hour or up to 1 day.
