Baked Pork Chops w/ Parmesan-Sage Crust

- 1 1/2 cups fresh breadcrumbs made from crustless French bread
- 1 cup freshly grated parmesan cheese
- 1 Tbsp dried rubbed sage
- 1 tsp grated lemon peel
- 2 large eggs
- 1/4 cup flour
- 4 pork loin chops

- 2 Tbsp butter
- 2 Tbsp olive oil
Instructions
- Preheat oven to 425 degrees. Mix breadcrumbs, cheese, sage and lemon peel. Whisk eggs in medium bowl. Place flour on plate; season. Coat pork on both sides with flour. Dip in eggs, then coat with breadcrumb mixture.
- Melt butter and oil in skillet over medium-high heat. Add pork chops to skillet and cook 2 minutes per side. Transfer to oven, bake about 20 minutes.
