    Mushroom Meat Loaf in Potato Crust

    List of Ingredients


    • Meat Loaf:
    • 12 oz mushrooms
    • 1 medium onion, cut into 1-inch chunks
    • 1 lb 95% lean ground beef
    • 2 slices firm white bread, processed to crumbs
    • 1 large egg
    • 1 small bell red pepper, finely diced
    • 1 Tbsp dark spicy mustard
    • 1 Tbsp ketchup
    • 1 tsp salt
    • 1/2 tsp black pepper

    • Topping:
    • 1 medium-large Idaho potato, peeled and cut into 2-inch cubes
    • 1/4 cup reduced - fat milk
    • 1 garlic clove, pressed
    • 1/4 tsp salt


    Instructions


    1. Heat oven to 450 degrees. Coat broiler pan with cooking spray. Spread mushrooms and onion to fill pan. Cover with foil and roast 10 minutes; uncover and roast 10 minutes more, or until browned. Cover with foil again; let stand until cool. Finely chop. In a bowl, combine mushroom mixture with remaining meat loaf ingredients just until evenly mixed. Reduce heat to 400 degrees and coat broiler pan with cooking spray again; form beef mixture into 9 by 4 inch loaf. Bake 45 minutes, or until your meat thermometer registers an internal temp reaches 160 degrees.
    2. Meanwhile, place potato in a saucepan with enough water to cover; bring to a boil over high heat and cook 8 minutes, or until tender. Drain; set aside. In the same saucepan over low heat, bring milk, garlic and salt to a simmer; add potato and mash well. Beat with a wooden spoon for a fluffier texture. Spread potato mixture over loaf; bake 10 to 15 minutes more, then broil 1 to 2 minutes, or until golden.
