    List of Ingredients


    • 3 tsp olive oil
    • 2 1/2 to 3 lb fryer - broiler chicken, cut up, skin removed
    • 2 bell peppers, sliced
    • 10 oz mushrooms, cut in half
    • 1 medium onion, sliced
    • 2 tsp minced garlic
    • 1 - 28 oz can peeled tomatoes in thick puree
    • 1 orange, peel removed with vegetable peeler in strips
    • 3/4 tsp salt
    • 1/2 tsp peper and dried thyme


    Instructions


    1. Heat 1 tsp oil in 5 quart Dutch oven over medium heat. Add chicken in batches and cook until browned. Remove to plate.
    2. Add remaining 2 tsp oil to pot along with peppers, mushrooms and onion. Saute 10 minutes or until lightly browned. Push aside; add garlic and saute until fragrant. Add chicken, tomatoes, garlic, orange peel, salt, pepper and thyme. Carefully break up tomatoes with side of spoon. Bring to a boil, reduce heat, cover and simmer 40 minutes or until chicken is cooked through and easy to pull off bone. Remove orange peel before serving.
