Chicken Tacos W/ Sour Cream Salsa

- 1 lb chicken tenders
- 1 Tbsp Mexican or fajita seasoning *
- 3/4 tsp kosher salt
- 2 Tbsp olive oil
- 1 green or yellow bell pepper, sliced
- 1/2 cup sour cream
- 1 tsp lime zest
- 1 Tbsp lime juice
- 3 Tbsp chopped cilantro
- 2 plum tomatoes, seeded and chopped
- 8 - 6" flour tortillas, warmed
- 1 head Bibb lettuce, seperated into leaves
Instructions
- Cut chicken tenders in half lengthwise to make thin strips; toss with Mexican seasoning and 1/2 tsp of the salt.
- Cook chicken in oil in a large nonstick skillet over medium-high heat; stirring often, until cooked through, 5 minutes. Remove from skillet and keep warm. Add peppers to skillet and cook until softened, 3 minutes; return chicken to skillet and stir to combine with peppers.
- Meanwhile stir together sour cream, lime zest, lime juice, cilantro, tomatoes, and remaining salt.
- Line tortillas with lettuce, top with chicken-and-pepper mixture, and serve with sour cream salsa.
Final Comments
* Some Mexican seasonings contain salt. If the one you're using has salt, omit the 1/2 tsp used to toss with the chicken.
Makes 4 servings.
