    Chicken Tacos W/ Sour Cream Salsa

    List of Ingredients


    • 1 lb chicken tenders
    • 1 Tbsp Mexican or fajita seasoning *
    • 3/4 tsp kosher salt
    • 2 Tbsp olive oil
    • 1 green or yellow bell pepper, sliced
    • 1/2 cup sour cream
    • 1 tsp lime zest
    • 1 Tbsp lime juice
    • 3 Tbsp chopped cilantro
    • 2 plum tomatoes, seeded and chopped
    • 8 - 6" flour tortillas, warmed
    • 1 head Bibb lettuce, seperated into leaves


    Instructions


    1. Cut chicken tenders in half lengthwise to make thin strips; toss with Mexican seasoning and 1/2 tsp of the salt.
    2. Cook chicken in oil in a large nonstick skillet over medium-high heat; stirring often, until cooked through, 5 minutes. Remove from skillet and keep warm. Add peppers to skillet and cook until softened, 3 minutes; return chicken to skillet and stir to combine with peppers.
    3. Meanwhile stir together sour cream, lime zest, lime juice, cilantro, tomatoes, and remaining salt.
    4. Line tortillas with lettuce, top with chicken-and-pepper mixture, and serve with sour cream salsa.


    Final Comments


    * Some Mexican seasonings contain salt. If the one you're using has salt, omit the 1/2 tsp used to toss with the chicken.

    Makes 4 servings.
