Sesame Quinoa Salad w/ Shrimp

- 1 cup uncooked quinoa
- 1 pound cooked medium shrimp, peeled and deveined
- 1 yellow or red pepper, seeded and diced
- 3 Tbsp chopped fresh cilantro
- 2 green onions, minced
- 2 Tbsp rice wine vinegar
- 1 Tbsp sesame oil
- salt and pepper
Instructions
- Combine quinoa and 2 cups of water in medium saucepan. Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes, until liquid is absorbed and quinoa is translucent.
- Remove from heat and stir in next 6 ingredients. Season to taste with salt and black pepper. Serve warm or chilled.
