    Sesame Quinoa Salad w/ Shrimp

    List of Ingredients


    • 1 cup uncooked quinoa
    • 1 pound cooked medium shrimp, peeled and deveined
    • 1 yellow or red pepper, seeded and diced
    • 3 Tbsp chopped fresh cilantro
    • 2 green onions, minced
    • 2 Tbsp rice wine vinegar
    • 1 Tbsp sesame oil
    • salt and pepper


    Instructions


    1. Combine quinoa and 2 cups of water in medium saucepan. Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes, until liquid is absorbed and quinoa is translucent.
    2. Remove from heat and stir in next 6 ingredients. Season to taste with salt and black pepper. Serve warm or chilled.
