    Portobello Mushroom Salad

    List of Ingredients


    • 1 cup Balsamic vinegar
    • 1/2 cup extra virgin olive oil
    • 2 Tbsp finely chopped fresh garlic
    • 1 Tbsp finely chopped fresh or dried rosemary
    • 2 heads Romaine lettuce (cut into 1 1/2" pieces)
    • 6 Portobello mushroom caps (1/4" thick slices)
    • 1 cup shaved parmigiano reggiano cheese
    • 4 medium sized tomatoes, diced
    • 1/4 cup extra virgin olive oil
    • Fresh ground black pepper
    • Salt, to taste


    Instructions


    1. Saute garlic and rosemary in extra virgin olive oil for one minute.
    2. Add balsamic vinegar. Bring to boil and simmer for four minutes.
    3. Chill dressing.
    4. Coat sliced mushrooms with balsamic dressing and set aside.
    5. Layer the ingredients in the order listed, on a large serving platter. Drizzle with remaining dressing and olive oil. Salt to taste.
