Portobello Mushroom Salad

List of Ingredients
- 1 cup Balsamic vinegar
- 1/2 cup extra virgin olive oil
- 2 Tbsp finely chopped fresh garlic
- 1 Tbsp finely chopped fresh or dried rosemary
- 2 heads Romaine lettuce (cut into 1 1/2" pieces)
- 6 Portobello mushroom caps (1/4" thick slices)
- 1 cup shaved parmigiano reggiano cheese
- 4 medium sized tomatoes, diced
- 1/4 cup extra virgin olive oil
- Fresh ground black pepper
- Salt, to taste
Instructions
- Saute garlic and rosemary in extra virgin olive oil for one minute.
- Add balsamic vinegar. Bring to boil and simmer for four minutes.
- Chill dressing.
- Coat sliced mushrooms with balsamic dressing and set aside.
- Layer the ingredients in the order listed, on a large serving platter. Drizzle with remaining dressing and olive oil. Salt to taste.
