    List of Ingredients


    • 1 large Spanish onion
    • 3 carrots, peeled and chopped
    • 4 celery stalks with leaves, chopped
    • 2 whole tomatoes, chopped
    • 1 leek, chopped
    • 1/2 head garlic
    • 1/3 cup white wine
    • 12 cups mineral or filtered water
    • 1 1/2 tsp kosher salt
    • 1/4 tsp whole peppercorns
    • 3 fresh Italian parsley sprigs
    • 1 fresh thyme sprig
    • 1 bay leaf


    Instructions


    1. Combine all the ingredients in a large stockpot.
    2. Bring to a boil over medium-high heat.
    3. Reduce heat, partially cover, and simmer for 1 hour.
    4. Strain the stock and discard solids.
