- 3 slices bacon, diced
- 1 medium potato, diced
- 1/4 cup onion, chopped
- 1 - 8 oz clam juice
- 2 - 6.5 oz minced clams, drained, reserving liquid
- 2 cups heavy cream
Instructions
- In medium pot brown bacon over medium heat (do not drain drippings). Add potato and onion, saute about 7 minutes. Add clam juice and clam liquid. Cover and simmer 15 minutes or until potato is tender. Stir in cream and clams and bring to slow simmer (do not boil).
