    Mashed Potatoes with Spinach and Cheese

    List of Ingredients


    • 4 - 6 oz bags fresh baby spinach
    • 4 lbs potatoes, peeled, cut into 2" cubes
    • 1 stick butter
    • 1 1/4 cups warm whole milk
    • 12 oz grated Gruyere cheese


    Instructions


    1. Boil spinach 1 minutes in salted water. Drain well. Squeeze out as much water as possible. Set aside.
    2. Cook potatoes until tender, about 30 minutes. Drain and return to pot. Mash until almost smooth. Set pot over low heat. Add butter and stir until melted. Gradually add milk, mashing until smooth. Add cheese and spinach, stir until cheese melts. Season to taste.
