Stuffed Portabello Mushrooms

List of Ingredients
- 6 portabello mushrooms, cleaned
- 1/3 cup beef or vegetable broth
- 1 Tbsp olive oil
- 1 onion, chopped
- 1 clove garlic, finely chopped
- 1 tomato cored, seeded and chopped
- 1 tsp dried oregano
- 1/3 cup dry seasoned bread crumbs
- 2 Tbsp grated parmesan cheese
- 3/4 cup shredded mozzarella cheese (about 3 ounces)
Instructions
- Heat oven to 425 degrees.
- Remove stems from mushrooms; chop stems. Place mushroom caps, tops down, in a large baking dish. Pour broth over mushrooms. Cover dish with aluminum foil.
- Bake in heat 425 degree oven for 15 minutes or until mushrooms are tender. Remove mushrooms from baking dish. Turn oven to broil.
- Meanwhile, heat oil in large nonstick skillet. Add onion and garlic; saute 5 minutes. Add chopped mushroom stems, tomato and oregano; cook 5 minutes. Stir in bread crumbs and parmesan cheese. Set aside and keep warm.
- Coat a baking sheet with nonstick cooking spray. Stuff mushrooms with tomato mixture. Sprinkle with mozzarella. Broil until cheese melts.
