    Stuffed Portabello Mushrooms

    List of Ingredients


    • 6 portabello mushrooms, cleaned
    • 1/3 cup beef or vegetable broth
    • 1 Tbsp olive oil
    • 1 onion, chopped
    • 1 clove garlic, finely chopped
    • 1 tomato cored, seeded and chopped
    • 1 tsp dried oregano
    • 1/3 cup dry seasoned bread crumbs
    • 2 Tbsp grated parmesan cheese
    • 3/4 cup shredded mozzarella cheese (about 3 ounces)


    Instructions


    1. Heat oven to 425 degrees.
    2. Remove stems from mushrooms; chop stems. Place mushroom caps, tops down, in a large baking dish. Pour broth over mushrooms. Cover dish with aluminum foil.
    3. Bake in heat 425 degree oven for 15 minutes or until mushrooms are tender. Remove mushrooms from baking dish. Turn oven to broil.
    4. Meanwhile, heat oil in large nonstick skillet. Add onion and garlic; saute 5 minutes. Add chopped mushroom stems, tomato and oregano; cook 5 minutes. Stir in bread crumbs and parmesan cheese. Set aside and keep warm.
    5. Coat a baking sheet with nonstick cooking spray. Stuff mushrooms with tomato mixture. Sprinkle with mozzarella. Broil until cheese melts.
