    I received this recipe from an old acquaintance. I adjusted it for my family.


    List of Ingredients


    • 1 Stick of Butter
    • 1 Box Jiffy Cornbread Mix
    • 2 Eggs
    • 1 Tsp. Baking Powder
    • 1 Small Can Cream of Corn (optional)
    • 1 8 Oz. Container of Sour Cream
    • 1 Medium Size Iron Skillet


    Instructions


    1. Preheat oven to 400 and spray iron skillet with non stick cooking spray.
    2. Place butter in the skillet and place in preheated oven. Remove when butter has melted.
    3. Add the rest of the ingredients and mix well.
    4. Return to oven and bake for 20 minutes or until the top is a golden brown.


    Final Comments


    My family loves this with chile, chicken and bar-b-que. The leftovers are great the next day with scrambled eggs. It is moist and fluffy, not dried. It is more like a Johnny Cake.
