I received this recipe from an old acquaintance. I adjusted it for my family.
List of Ingredients
- 1 Stick of Butter
- 1 Box Jiffy Cornbread Mix
- 2 Eggs
- 1 Tsp. Baking Powder
- 1 Small Can Cream of Corn (optional)
- 1 8 Oz. Container of Sour Cream
- 1 Medium Size Iron Skillet
Instructions
- Preheat oven to 400 and spray iron skillet with non stick cooking spray.
- Place butter in the skillet and place in preheated oven. Remove when butter has melted.
- Add the rest of the ingredients and mix well.
- Return to oven and bake for 20 minutes or until the top is a golden brown.
Final Comments
My family loves this with chile, chicken and bar-b-que. The leftovers are great the next day with scrambled eggs. It is moist and fluffy, not dried. It is more like a Johnny Cake.
