Willard Scott's Favorite Christmas Cake

I found this recipe in the Redbook magazine 18 years ago. It is my dad's and step son's favorite cake. It also makes a beautiful cake for the Christmas holidays. And it is soooo simple to do and is sooo very delicious. It will melt in your mouth!
List of Ingredients
- 2 1/2 Cups Self Rising Flour
- 1 Cup Buttermilk
- 1 1/2 Cup Vegetable oil
- 1 Tsp. Baking Soda
- 1 Tsp. Vanilla Extract
- 1/2 Cup (2 one once bottles) Red Food Coloring
- 1 1/2 Cups of Sugar
- 1 Tsp. of Unsweetened Cocoa Powder
- 1 Tsp. White Vinagar
- 2 Large Eggs
Instructions
- Heat oven to 350 degrees. Mix together all ingredients with electric mixer.
- Spray 3 nine inch cake pans or 1 13"x9" pan with nonstick spray.
- Pour batter evenly in the cake pans
- Bake for 20 minutes or until toothpick inserted comes out clean
- Cool layers on wire racks for 10 minutes.
- Carefully remove layer from pans to racks to cool completely.
Final Comments
Top with cream cheese frosting.
